Baked Eggs (Recipe)
My new Sunday morning must-have is baked eggs. They are very easy to make, there is hardly any cleanup, and they taste terrific! This is my basic recipe; you can add any other spices and ingredients that you like.
INGREDIENTS
Thin deli ham slices
Eggs
Green onions
Salt
Pepper
Shredded cheese
INSTRUCTIONS
Coat the cups of a muffin tin with nonstick spray. Put a piece of deli ham in each muffin cup making a "cup". Crack an egg into each cup, being careful not to break the yoke. Top each ham and egg pocket with salt, pepper and green onion slices. Bake at 380 degrees for 12 minutes. Remove from oven and sprinkle with shredded cheese. Lift each ham pocket out using your fingers. The white will be set, but the yokes will be slightly runny. Cook longer if you do not like runny yokes. Serve with toast and enjoy!
